Diet and Nutrition Considerations for Oral and Systemic Health in Individuals with Disabilities

Dr. Marshall is a Registered Dietitian and Professor in the Department of Preventive and Community Dentistry at the University of Iowa. Her primary research interests focus on the relationships among diet, nutrition, oral health, and systemic health. Dr. Marshall has engaged with national and international groups to understand, educate, and advocate for caries prevention with emphasis on diet. She is a member of multiple professional nutrition and dental organizations, a Board Member of the American Academy of Cariology, and a research editor for the Journal of the Academy of Nutrition and Dietetics.

Course Description
The role of diet and nutrition in both oral health and systemic health will be reviewed. Feeding considerations including the impact of poor oral health on food choices and altered nutrient requirements for individuals with disabilities will be discussed. Dietary screening and assessment strategies to reduce oral disease and improve overall diet quality for individuals with disabilities will be presented.
Educational Objectives
- The participant will be able to identify dietary risk factors common to both oral and systemic disease.
- The participant will be able to outline feeding strategies to facilitate oral and systemic health in individuals with oral motor deficits.
- The participant will be able to conduct basic dietary screening and assessment to reduce oral disease and improve overall diet quality.
